  1. Preheat oven to 300 degrees F.
  2. Line a baking sheet with parchment paper, light grease the paper.
  3. Add oats to a large bowl. Pour melted coconut oil, honey, brown sugar, cinnamon, salt, vanilla extract, almond extract, and cranberries into the bowl with oats.
  4. Mix well, all oat should be lightly coated.
  5. Spread granola mixture on prepared baking sheet.
  6. Bake granola at 300 degrees F for 30 minutes. Gently stir every ten minutes to prevent burning. Remove granola from oven and set aside to cool.
  7. Break granola into clusters. Store in an airtight container in the refridgerator for up to 4 weeks. Eat as cereal, add to yogurt and icecream, or eat as a snack.
Recipe Notes

Sliced almonds and other nuts are optional. Just add 1 cup nuts, and use 3 cups oats instead of 4 cups.
